Mixed pickles
1 medium head of cabbage, chopped
3-4 sweet peppers, chopped
2 large green tomatoes, chopped
2 cans of corn, drained
2 cans of green beans, drained
9 cups of water
1 cup of pickling salt
Mock caramel frosting
3 cups powdered sugar
3/4 cup butter, softened
2 tbls milk
1 tbls vanilla
1 tbls instant coffee
Frost your favorite yellow cake.
Harvest Peach Cobbler
2 quarts of peaches, drained juice reserved
1 cup peach juice
1 box of cranberry orange muffin mix
1 egg
2/3 cup melted butter
1/3 cup sugar
1 T cinnamon
Zest of 1 orange
Dried cranberries
Macaroni Salad
16 oz macaroni salad
1 large carrot, shredded
1 bell pepper, chopped
1 red onion, chopped
1 can of sweetened condensed milk
1 cup apple cider vinegar
2 cups of Mayo
1/4 cup sugar
1 tsp salt
1/2 tsp pepper

candy sprinkle eyes
Melt red candy melts according to package directions. Dip oreos in melts, leaving about 1/3 of the cookie exposed. Place on wax paper or paper plate. Sprinkle valentine sprinkles on red. Using a tweezer, dip one side of the side of the eye in the melts and place on the exposed part of the cookie as the eyes. Allow to set and enjoy.
Italian Salad
2-3 c. Spring salad mix
8 pepperonis, sliced
6 banana pepper cut in half
1/8 c. Sliced red onion
1/4 c shredded mozzarella
Dressing of choice
Joys Fried Rice
6 cups of cooked white rice (3 cups dry)
1 lb bacon
1 pkg of mini pepperoni
Soy sauce to taste
Chop and cook bacon with pepperoni in a large pot until bacon is cooked to your liking. Drain most of the grease off then add rice and allow to cooked with bacon and pepperoni. Add soy sauce. Enjoy.
Minute Steak/Poor man’s steak
2 lbs ground beef
1 cup Italian bread crumbs
1 T garlic salt
1/2 tsp pepper
1 egg
Mix everything together. Pat them out and fry them in a skillet until done and browned on both sides. Transfer to an baking dish and make gravy to pour overtop. Bake at 350 for about 15 minutes
Marinated Cheese
8 oz cheddar cheese
8 oz block of cream cheese
1/2 cup vegetable oil
1/4 cup vinegar
2 tbls water
1 1/2 tsp sugar
1 packet of dry Italian dressing mix
1/4 cup sliced green onions
Slice cheeses and alternate in a shallow dish. Mix remaining ingredients and pour over cheese. Refrigerate for 8 hours to overnight. Serve with crackers
Mozerella stuffed meatballs
2lbs of ground beef
2 packets of onion soup mix
2 eggs
2 cloves of minced garlic
8 oz block of mozzarella, cut into 24 cubes
Mix first 4 ingredients until well combined. Shape meat around each cube of cheese. Place on a baking sheet and bake at 350 for 20 minutes. Serve with marinara sauce.
Ham and cheese sandwiches
6 hoagie rolls
1 lb of chipped ham
6 slices of Colby jack cheese
Tub of garden vegetable cream cheese
Spread cream cheese on the inside of hoagie rolls. Top with ham and cheese. Bake at 350 for 10 minutes
Mac n cheese
¼ cup unsalted butter
¼ cup all-purpose flour
1 cup whole milk
2 cups heavy whipping cream
2 cups shredded white cheddar cheese
1 teaspoon kosher salt
1 teaspoon black pepper
1 teaspoon dry mustard
1 pound pasta, cooked
Cook pasta according to package
directions while making the sauce. Drain
and set aside until ready to use. In a large pot on medium high heat, add butter until melted. Whisk in the flour and cook for about one minute. Reduce heat
to medium and add milk, heavy cream,
salt, dry mustard and pepper. Continue whisking until it begins to bubble. Reduce to low and add white cheddar. Stir until melted. Add cooked pasta, stirring until combined. Remove from heat and allow to sit about 5 minutes to thicken.

Lemon Blueberry Scones
2 C. All purpose flour
1/4 c granulated sugar
1 tbls lemon zest
2 tsp baking powder
1/2 tsp salt
1/2 c butter, very cold
1/2 c heavy whipping cream, plus more for brushing
1 egg
2 tsp vanilla
1 c. Blueberries
2 tbls Coarse sugar
Combine granulated sugar, flour, zest, baking powder and salt. Grate or cut in your butter into very small pieces into flour mixture. In a separate bowl combine heavy whipping cream, egg and vanilla. Make well in flour mixture and pour wet mixture in. Mix until barely combined, adding blueberries when it’s about half way mixed. Pour dough onto floured surface and fold over a few times just To make sure everything is combined. Shape into about an 8 inch disk and cut dough into 8 wedges. Place wedges on cookie sheet that has been sprayed with cooking spray. Brush heavy cream over top and sprinkle coarse sugar on top of that. Bake at 425 for about 20 minutes. Glaze if you wish. It is good either way.
Lemon glaze
1 c powder sugar
3 tbls fresh lemon juice
Combine in a small bowl until all blended.
2 ingredient Strawberry dessert

Slice cream horns at each knuckle and place on tray. Top each one with a slice of strawberry.
Ham Loaf
2 pounds ground ham
1 pound ground pork
2 eggs
2 tablespoons mustard
1/2 cup ketchup
2/3 cup onion finely chopped
1 ½ cups graham cracker crumbs
1 ½ cups milk
•1 teaspoon smoked paprika
Ham Loaf Glaze
•1 ½ cups brown sugar
•1/2 cup white vinegar
•1 teaspoon mustard
• 8 ounces crushed pineapple with juice
Mix all ground ham, ground pork,
eggs, ketchup, mustard, chopped
onion, graham cracker crumbs and
milk together very well. In a greased 9 x 13 inch baking dish or lasagna pan shape meat into a loaf using your hands. Sprinkle with at least 1 teaspoon of paprika over the top of the loaf.
Preheat oven to 350°F and bake covered for 30 minutes.
Combine all glaze ingredients in a
pan over medium high heat.Stir often until mixture boils. Boil for one minute. Pour glaze over ham loaf and return to oven to bake uncovered for an additional hour. Baste with glaze 2 to 3 times over the hour.Use a digital meat thermometer. The dish is done baking when the center of the ham loaf reaches 160°F. Cover with foil once the outside of the ham
loaf has reached a golden brown color if it needs to continue baking.
Meatloaf topping
1/2 c. Ketchup
1/2 c chili sauce
2 tbs brown sugar
Meatloaf Sandwiches
Left over meatloaf, sliced
American cheese
Sautéed onions
Bread of choice
Butter
Warm meatloaf pieces in hot pan over medium heat until there is a light brown crust on each side. Butter one side of each piece of bread you are using. Place a piece of bread butter side down in a skillet over medium heat, layer on cheese, meatloaf, onions and more cheese and top bread, butter side up. Grill like a grilled cheese
Hand Pies
-1 double recipe of pie dough
-pie filling of choice
-2 eggs
-2 tbs water
Roll crust out on floured surface to about 1/8 inch thick. Using a round cutter, cut about a 5 inch circle. Place a couple tablespoons of filling into the pie circle and fold over. Seal edges using a fork. Mix together eggs and water in a small bowl. Brush egg wash onto pies and bake at 425 for about 15 minutes.
Hotdog Onions
2 medium sweet onions, peeled and sliced
2 tbls oil
1/3 cup of ketchup
1/4 tsp chili powder
Sprinkle of cinnamon
Salt and pepper to taste
1 cup of water
Heat oil in a medium saucepan. Add in onion and cook until starting to brown a bit. Add remaining ingredients except water. Stir until everything is coated. Add in water and let it come to a boil. Turn the heat down and allow to simmer for 10 minutes or so. Serve on hotdogs.
Mammy Potato Salad
8-10 good size potatoes, peeled and boiled and cut into cubes
6-8 boiled eggs, most of them chopped but leave a few whole to garnish the top
1.5-2 cups of mayo
3 heaping tablespoons of pickle relish
1 cup of finely chopped onion
Salt and pepper to taste
Mix potatoes, chopped eggs. Mayo, relish, onion, salt and pepper until well combined. Garnish with sliced eggs and a sprinkle of paprika for color. Chill until serving or eat warm. Good either way.
Mexican Skillet Street Corn
3 (15.25-ounce) cans corn drained
2 tablespoons butter
salt
3 tablespoons mayonnaise
1-2 tablespoons lime juice
2 teaspoons chili powder divided
cotija cheese
cilantro roughly chopped
Heat a cast iron skillet on high heat and add the corn. Cook for 8-10 minutes, stirring occasionally. Remove from heat and add in butter and salt. Stir until mixed. stir in mayo and lime juice. Add 1 teaspoon chili powder and mix well. Sprinkle with cojita cheese, chili powder, and chopped cilantro.
Macaroni & Tomatoes
1 cup dry macaroni noodles
1 quart of canned tomatoes
Salt
A little sugar
Monte Cristo Sliders
12-16 Hawaiian rolls, sliced
12 slices of Swiss cheese
12 slices of deli ham
12 slices of deli turkey
1/2 cup of butter
1 egg
Powdered sugar for topping
Strawberry or raspberry preserves for dipping
Lay bottom half of slider buns on cookie sheet or in a 9x13 pan. Layer Swiss cheese, ham and turkey in that order. Replace slider tops. Melt butter and allow to cool a little. Whisk in egg and brush mixture all over top and sides of the sliders. Bake sandwiches at 350 for about 20-24 minutes. Remove from oven and dust with powdered sugar. Serve with jam or preserves for dipping.
Hot Chocolate Fudge
1 1/2 cups of semi sweet chocolate chips
1 1/2 cups milk chocolate
1 can of sweetened condensed milk
1/2 cup of powdered hot chocolate mix
3 tablespoons of butter
4 cups of marshmallows
1-2 teaspoons of vanilla extract
In a double boiler, melt chocolate chip, butter, sweetened condensed milk and hot chocolate mix until melted and well combined. Turn off heat and stir in 2 cups of marshmallows for about a minute. Pour mixture into a well greased and parchment paper lined 8x8 inch pan. Top with remaining marshmallows and press them on lightly. You can now melt some more chocolate if you would like and drizzle over the top. Refrigerate for 4 hours or until set and cut into small squares. I think these would be really good with peppermint extract and candy canes mixed in.
Honey Cinnamon Butter
1 stick of softened butter
1 tsp cinnamon
1/2 cup of honey
Mix well and store in an airtight container.
Twice baked potato casserole
½ pound bacon, cooked crisp and chopped
8 medium russet potatoes, Equal to about
6 pounds
3 Tablespoons canola oil
2 sticks salted butter, melted
1 cup sour cream
1 cup whole milk
1 cup grated cheddar cheese, plus more for topping
3 green onions, sliced
Salt and pepper, to taste
Rub potatoes with oil and bake until done. Take the skin off of all but 2 potatoes and place in a large bowl. Add remaining ingredients and mash well until blended. Top with cheese, bake at 350 for about 25 minutes.
Sugar and Cinnamon Rolls
12 Hawaiian rolls
12 tablespoons butter divided
⅔ cup brown sugar
2 teaspoons cinnamon
4 ounces cream cheese softened
2 cups powdered sugar
¼ cup milk
Preheat oven to 350°.
Slice the Hawaiian rolls in half.
Melt 2 tablespoons of butter in the bottom of a 9×13 baking dish. Lay the bottom half of the rolls in the pan.
In a small bowl melt 8 tablespoons of butter. Mix in the brown sugar and cinnamon. Spread half of the cinnamon butter on the rolls in the pan. I like to use a pastry brush for this, but you can use a spoon or spatula to spread the butter all over the rolls.
Place the tops of the rolls over the butter mixture. Pour the rest of the cinnamon butter evenly over the top of the rolls. Bake for 15 minutes.
While the rolls are baking, mix up the frosting.
To make the frosting: In a small bowl melt 2 tablespoons of butter. Add the cream cheese, powdered sugar and milk and whisk until smooth. Remove cinnamon rolls from oven and let them set for 10 minutes. Pour the frosting over the rolls and use a knife or spatula to evenly spread it over top.

Italian dressing
Slice cucumbers and cover with Italian dressing. Allow to marinate for a few hours before serving.
Fruit Kabobs
One whole watermelon
One whole canteloupe, cubed
2 lbs of strawberries, washed and tops cut off
1 pint of blueberries, washed
1 whole pineapple, cut into cubes
Slice watermelon in half length wise as even as you can. Dice up the watermelon inside into big chunks. Place one half of watermelon, cut side down on a platter. Using wooden skewers, thread fruit onto skewers starting with blueberries, putting blueberries in between each piece of fruit and ending with blueberries. This will prevent the friuit from sliding around on the skewers. Place skewers into watermelon starting down the middle and going to the sides.
Honey butter corn
2 cans of sweet corn, drained
4 tablespoons of butter
3 tablespoons of honey
6 tablespoons of cream cheese
Salt to taste
Allow butter to melt in skillet, add honey and corn. Fry in butter until hot then add cream cheese and allow to cook until melted and mix in with corn. Salt to your liking.
Mini apple fritters
2 cups self-rising flour
1 teaspoon cinnamon
1/2 cup firmly packed brown sugar
2 eggs
1/2-3/4 cup milk
1 teaspoon vanilla extract
2 apples, finely chopped (about 2 cups
chopped)
vegetable oil for frying, about 1.5 inches of oil
For the Honey Cream Cheese
1 (8-ounce) block cream cheese,
softened
3 tablespoons honey
1 teaspoon apple pie spice
Mix all everything together in a medium except for cream cheese mixture. Drop by tablespoon fulls into hot oil. Do not over crowd. Fry on both sides until golden brown.
Mix cream cheese, honey and spice together. Serve along side fritters
Maddies lemon ice cream
1/2 c. Vanilla ice cream
3 tsp lemon juice
1/2 tsp sugar
1 tbls sprinkles
A sprinkle of powdered sugar
Stir all ingredients together and enjoy.
